Let's get Kooking!
Here's a quick and cheap recipe to try out this weekend.
Ingredients:
500 g Pasta (preferably macaroni)
Boerewors sausage (remove the skin)
Half a cup of mixed veggies
1 small onion + 1 clove of garlic
Seasonings (whatever you like)
1 cup of grated cheddar cheese
2 tablespoons of tomato sauce or 1 tablespoon of tomato paste
Method:
1. Pour cold water in which you will boil your pasta on the stove and bring to boil while you make the sausage (you don't want to cook the pasta too early or too long, this will give you time).
In the meantime, saute the onions and add salt, pepper and garlic (optional) and keep frying for about 2 minutes then add the frozen veggies (or fresh finely diced ones) and keep frying for about two minutes.
The pasta water should be boiling by now, add a tablespoon of oil and salt to taste and wait t see if it's still boiling. Then you can add your pasta and boil for about ten minutes until al dente.
While your pasta is boiling, loosen up the sausage "mince" and add to your vegetables. Add whatever spices you desire and a dash (about 2 tablespoons) of tomato sauce. Mix well and cover, leave to cook for about 5 to 10 minutes until the meat is cooked.
Once your pasta is cooked, I need you to do this fast lol. Grab a strainer and pour out the pasta and then pour it back into the pot. You want to strain it but not get all the water out. Do not rinse the pasta.
Mix the cooked sausage with the pasta (you can keep the pot on the stove but make sure that you turn it off) and add your fresh herbs. Add your cup of grated cheddar cheese and mix everything well.
Serve immediately!
